The Corner Store, the SoHo restaurant that became a celebrity magnet after it opened in late 2024, makes its West Coast debut on the third floor of The Cosmopolitan of Las Vegas on Monday, November 9. A new full-service dining room a month out from opening means one thing for local hospitality workers: a kitchen, bar and floor staff to fill before the doors open.

What's Coming to The Cosmopolitan
The restaurant takes over the third-floor space that used to hold Blue Ribbon American Grill & Oyster Bar. MGM Resorts announced the opening on October 2, and reservations are already being taken through The Cosmopolitan.
The menu leans on the dishes that made the original famous: lobster and caviar rolls, five-cheese pizza rolls, a Caesar with everything-bagel croutons, and a Wagyu French dip built on ribeye slow-roasted for 72 hours. Las Vegas gets something New York doesn't, a Butcher's Counter of hand-cut steaks including a Wagyu tomahawk. The bar is built around martinis, served in a large-format pour for two or three guests, alongside a wine list from Catch Hospitality's wine director.
The room itself, designed by Rockwell Group, includes a main bar, a separate Martini Room with a green onyx bar, a dining room modeled on vintage train cars, and a private dining room for up to 24 guests.

Neither MGM Resorts nor Catch Hospitality has published a hiring number, and we won't guess one. What is clear is the shape of the staff a room like this needs. Chef Michael Vignola leads the culinary program with Las Vegas executive chef Daniel Bernardo, and openings tagged to The Corner Store, including line cook, food runner and assistant general manager roles, have begun appearing under MGM Resorts' name.
